Homemade Almond Milk
1 cup raw organic whole almonds*
2 cups water
6 cups water**
Soak the nuts overnight in 2 cups water. Drain and discard the 2 cups water (do not use this water or feed it to your plants). Place the soaked almonds into your blender with the 6 cups water. Blend on high speed until the almonds are pulverized (depending on the blender, may take 2-4 minutes). Pour the liquid through a strainer (I use a ‘nut milk’ bag, but a mesh strainer or cheese cloth would work, too). Place the milk into mason jars and refrigerate. Good up to one week. The remaining nut pulp can be used for many recipes (including muffins, pie crusts, topping, blended into smoothies, rolling a banana, etc.).
*In addition to almonds, brazil nuts, cashews, walnuts, pecans, etc. – any nut will do!
**If you prefer a thicker creamier milk, just tweak the ratio from 1:6 to 2:6 or 1:5 – whatever works best for you. Enjoy!
Some people like to add vanilla, or some other flavoring or sweetener to this basic recipe. Personally, I prefer it just as it is.

Cranberry Punch
1 inch peeled fresh ginger
1/2 peeled fresh pineapple
12 oz. fresh cranberries

Juice and enjoy. Also great with a splash of sparkling water.

Creamy Sweet Potato/Yam Magic
organic yams (such as garnet or jewel)
fresh dates (pitted and soaked in water)
water
pinch of salt (optional)
I should start by saying that I deliberately left out amounts. Why? Because it all depends on your taste preference and any way you make this it is going to rock. (Don't be intimidated by the number of steps listed - it is really easy. I promise!)
Another note about this recipe - it is a family favorite, and is becoming an annual Thanksgiving dish. If you want to make this a day ahead of serving, just stop after Step 7, let it cool and keep it in the fridge overnight. This dish also travels very well.

I should start by saying that I deliberately left out amounts. Why? Because it all depends on your taste preference and any way you make this it is going to rock. (Don't be intimidated by the number of steps listed - it is really easy. I promise!)
- Step 1 - Pit and soak the fresh dates (I put them in a mason jar with a lid in the fridge overnight if I plan ahead, but if not... I just pop 'em in water while the yams are baking).
- Step 2 - Preheat oven to whatever (350-425).
- Step 3 - Scrub the yams, then cut them into 1/2 inch rounds and layer a Corningware dish (use any casserole or baking dish you prefer, I find that the Corningware heats the way I like for this recipe). Add enough water to more than cover the bottom of the pan. Cover the dish with a lid and place in the oven.
- Step 4 - Walk away for 35-45 minutes. Go do something fun.
- Step 5 - Check the yams. When they're done they'll be super soft when you stick a fork in them. Take the dish out of the oven, remove the lid, and let it cool for a few minutes.
- Step 6 - While the yams are cooling, throw the dates with their soak water into the blender and blend until smooth.
- Step 7 - Remove the skins from the yam rounds, which is very easy to do now that they're so soft. Return the rounds to the same baking dish (keep the water that's in there, too!) and add the date blend. Grab your potato masher and get mashing. (Add a pinch of salt if desired.) It will all combine very easily - no electric beaters necessary!
- Step 8 - Cover the dish again and return it to the oven to bake a little longer (10-15 minutes).
- Step 9 - Bring to the table and enjoy!
